Toji Old Fashioned

If stirred down serves are more your tempo, try our take on one of the world’s best selling cocktails. Blending Toku Sake with white miso syrup and a dash of Peychaud’s Bitters, the Toji Old Fashioned is a low abv alternative with an umami elevation.

Ingredients

To make the White Miso Syrup, take

1 part White Miso Paste (200 grams) and

1 part sugar syrup (200 ml)

– Combine in a bowl

– Stir until they have mixed together

– Pass through a sieve to remove any lumps

– Bottle and it is ready for use

This will keep for three days

 

To make the sugar syrup, take

1 part caster sugar (350 grams) and

1 part water (350 ml)

– Combine in a saucepan over a low heat

– Stir until the sugar has dissolved

– Take off heat and allow to cool

– Once cooled bottle and it is ready for use

This will keep for three days

Combine

all the ingredients into a rocks glass.

Fill

with cubed ice and stir.

Garnish

with pickled ginger on a bamboo skewer and serve with a smile!
